Sweet Potato, Coconut and Mango Smoothie
If you have never tried sweet potato in a smoothie then this a must try. Sweet potatoes are loaded with Beta-Carotene and Vitamin A; in fact 100g of sweet potato is enough to provide you with 90% of your recommended daily Vitamin A intake. The mango takes care of sweetness and taste and gives the smoothie a lovely colour.

Instructions
  1. Boil the sweet potato in water until soft, and then allow to chill in fridge.
  2. Place all ingredients in an up-right blender and blend smooth.
  3. Serve in a tall glass.
