“If you don’t eat your vegetables, you can’t have any pudding” is a saying that appeared on a Pink Floyd album if I am not mistaken! For this pudding you will eat any vegetables, believe me. A lovely sweet, smooth coconut pudding is combined with delicious berries - Simply irresistible.

Instructions
  1. Bring the coconut milk with the sugar and the lemon zest to a soft boil. Add the gelatin, when the coconut milk starts to boil again, remove from the heat and divide over 4 serving bowls. Allow cooling.
  2. Meanwhile place the berries with the maple syrup and a little water in a small sauce pan.
  3. Bring to a simmer and cook for 5 minutes so the fruit has softened and the liquid has thickened.
  4. Top the pudding with the berry compote and serve with a drizzle of coconut milk or coyo.
