If time constraint is an issue, or like me you often struggle with having little energy, it is time to get the slow cooker out of the cupboard! It has saved me so many times!
Throw everything in the pot, set on low and when you come back from work it is done. This is also another perfect meal for batch cooking.Amazing smells will greet you as you walk through the door!!
Cut the beef and all the vegetables in to chunky pieces.
Heat the oil in a skillet on high heat.
Season the beef with salt and the thyme.
Add the seasoned beef to the pan and fry until browned. Add the vegetables and fry for another minute, mixing well.
Add the broth and bay leaves and bring to a boil.
Transfer the mix to a slow cooker and cook until you come home, at least 5 hours.
If the liquid is still thin, thicken with a little tapioca starch mixed with some water.
